Delicious Dairy Free Ginger Spiced Cookies

Fill your kitchen with the warming scents of Christmas, when you bake our Delicious Dairy Free Ginger Spiced Cookies with your kids this Holidays. Then indulge your kids with some good old fashioned cookie decorating fun. Hand over the icing, pour out the sprinkles and sit back and watch your kids giggle together as they create their own cookie works of art.

It was Little Miss B’s turn for a day off preschool last week, as she succumbed to the family cold (like my kids it didn’t think anybody should miss out on having a turn!).Thankfully she only had a mild dose, so she just needed a day in her PJ’s helping her mummy out, in between her favorite TV shows that is. I decided to do some baking with her before she got too tired (or the calopl wore off!) and then we would all decorate the cookies together once the boys arrived home from school.

Delicious Dairy Free Ginger Spiced Cookies

Ingredients

125g Dairy Free Spread
350g Plain Flour
100 g Light Muscovado Sugar
3 tbs Golden Syrup
1 tsp Bicarbonate of Soda
2 tsp Ginger
1 tsp Cinammon
1 tsp Mixed Spice

Method

  • Carefully melt the dairy free spread with the syrup over a medium heat. (This is best done by an adult)
  • Measure the flour, bicarbonate of soda and all of the spices into a mixing bowl.
  • Pour in the melted mixture and give it all a good mix together.
  • Wrap in clingfilm and chill in the fridge for 15 minutes.
  • Roll out to a thickness of 3 mm and use Christmas cutters to cut out different shapes for the cookies.
  • Put them onto a baking tray and bake in the over for 8-10 minutes at 190C/Gas Mark 5.
  • Allow to cool on tray for a few minutes before transferring to a wire rack to cool completely before decorating.
  • Mix together icing sugar and water until the icing is at your desired consistency. We added in a few drops of food colouring and peppermint essence as well. Then pour out lots of different sprinkles into small bowls and let your kids go crazy with the decorating.

Bella was very keen to get hands on with measuring out the ingredients, so we were probably a bit hit and miss with the actual measurements (well 3 tbs is probably around the same as 3 big splodges!). The cookies didn’t seem to  suffer for it though.

They did bake REALLY really quickly though and we did mange to burn the first tray full, but luckily the recipe made plenty and we still had 3 more trays to cook.

Once the boys arrived home I laid out the icing and sprinkles and set them to work. They all sat down together and (just about) managed to share the icing and sprinkles as they decorated their cookies. The peppermint icing was a big hit with them all. They loved the decorating, but enjoyed the eating the best!
