When you hear apple, followed quickly by pecan, what you expect next may be pie? Or tart? Possibly muffin? How about Salad? Not so much. Well hold on now, I’ve got a super tasty apple pecan salad for you to try, and you are going to love it!
What gives this salad its unique taste is the roasted pecans. The combination of roasted pecans, juicy apples and fresh crispy spinach make this salad just right, and serves as a perfect side dish. It also does well all on its own for a nice light lunch.
Simply roast the pecans by placing them on a baking sheet and roast them in a 350 F oven for 8 to 10 minutes. You’ll start to smell them and it will be delightful!
The nuts give this salad a bit of protein, and roasting them just brings out their flavour – adding a bigger taste to a side dish that we tend to neglect.
Amazing Apple Pecan Salad
- One or two firm, ripe apples
- 1/4 cup roasted pecans
- 1/4 cup chopped celery
- 4 cups spinach leaves
- Balsamic Vinaigrette dressing
How to make Apple Pecan Salad
1. Wash and dry the spinach
2. Roast the pecans as mentioned above
3. Chop the celery to desired size
4. Peel and slice the apples
5. Mix all together, and serve with the balsamic dressing
You can use your favourite greens for this salad as well, regular lettuce is nice too. And try experimenting with your favorite nuts.
